Лучшие годы Густаво прошли в «Реале Сарагоса», где футболист провел 239 матчей и забил 63 гола. В 1997 году уругваец перебрался на Туманный Альбион в стан аристократов — и забивал в среднем в каждом третьем матче. В составе «Челси» он смог выиграть Кубок обладателей кубков и затем — Суперкубок УЕФА. После успешных сезонов в стане синих Пойет продолжил карьеру в «Тоттенхэме», но заполучить хоть какой-либо трофей игроку в составе шпор ему так и не удалось.
В 1995 году в составе сборной Уругвая игрок выиграл Кубок Америки.
После окончания игровой карьеры Густаво подался в тренеры. На протяжении трех лет он набирался опыта в качестве ассистента, чтобы в 2009 году стать наставником «Брайтона». А с 2013 по 2015 годы уругвайский специалист был главным рулевым того самого «Сандерленда», которому в 1999 году забил один из самых красивых мячей того розыгрыша Премьер-лиги.
